PREPARATION
Heat 1 tablespoon oil in a large, deep nonstick skillet over medium-high heat and cook fish until golden, about 4 minutes, turning once. Remove and set aside.
Heat remaining 1 tablespoon oil over medium heat and cook onion until tender, about 4 minutes, stirring occasionally. Add garlic and cook about 30 seconds. Stir in tomatoes, breaking up with a spoon. Stir in olives and Knorr® Shrimp flavor Bouillon Cube. Return snapper to skillet and bring to a boil. Reduce heat and simmer covered until snapper flakes with a fork, about 4 minutes. Stir in lime juice. Garnish with cilantro and serve with hot cooked rice.
