INGREDIENTS
1 small jicama, cut in thin strips
1 can (20 oz.) sliced pineapple in natural juice, drained and cut into short strips
1 small red onion, thinly sliced
Juice of 1 lime
2 tsp. grated lime peel
1 red jalapeno pepper, cut into 1/2-inch long thin strips

PREPARATION

Combine all ingredients in a large serving bowl; let stand at least 10 minutes. Stir before serving.
