PREPARATION
Preheat oven to 350°F.
Wrap garlic in aluminum foil. Roast garlic and onion on shallow baking pan about 1 hour or until very tender. Cool and peel garlic. Process garlic, onion and 1/4 cup water in a blender or food processor until smooth; set aside.
Heat oil in a medium saucepan over medium heat and cook garlic mixture about 5 minutes or until slightly thickened, stirring frequently. Stir in masa harina, chipotle and cumin. Cook about 1 minute, stirring frequently. Add remaining 3-1/4 cups water and Knorr® Reduced Sodium Chicken flavor Bouillon. Bring to a boil. Reduce heat and simmer covered about 10 minutes.
Serve with crumbled queso fresco, diced avocado and toasted tortilla strips.
