JAMAICAN RICE AND BEANS

INGREDIENTS
1 Tbsp. vegetable oil
1 cup onion, finely chopped
1 clove garlic, finely chopped
1 bay leaf
1 sprig fresh thyme
1 cinnamon stick
3 cups water
1-1/2 cups regular or converted rice
1/2 cup unsweetened coconut milk
2 Tbsp. Knorr® Reduced Sodium Chicken flavor Bouillon
1 can (19 oz.) red kidney beans, rinsed and drained
PREPARATION

Heat oil in a large saucepan over medium-high heat and cook onion about 3 minutes or until tender, stirring occasionally. Add garlic and next 3 ingredients and cook about 30 seconds. Stir in water and next 3 ingredients and bring to a boil. Reduce heat and simmer covered about 20 minutes or until rice is tender. Remove bay leaf, thyme and cinnamon. Add beans and heat through. Garnish with chopped green onions.
