GERMAN BRAISED BEEF TENDERLOIN

INGREDIENTS
3 cups water
4 medium carrots, cut into 1-inch-thick slices
1 cup thinly sliced mushrooms
1 package Knorr ® Sauerbraten (Pot Roast) recipe mix
1/4 cup dry red wine
1 Tbsp. firmly packed brown sugar (optional)
1/8 tsp. dried thyme leaves, crushed
1-1/2- lb. beef tenderloin
PREPARATION

Bring all ingredients except beef to a boil in a large saucepot over medium-high heat. Cook about 5 minutes, stirring occasionally. Reduce heat and stir in beef. Simmer covered about 25 minutes or until beef is desired doneness. Remove beef and thinly slice.

Serve sliced beef and broth mixture in shallow bowls over hot mashed potatoes.
