MEXICAN RICE

INGREDIENTS
1 Tbsp. vegetable oil
1-1/2 cups regular or converted rice
1/2 cup chopped onion
1 clove garlic, finely chopped
3 cups water
2 Tbsp. KnorrĀ® Tomato Bouillon with Chicken flavor
3/4 cup thinly sliced carrots
2 serrano chilies, seeded and choppedĀ (optional)
1/2 cup frozen green peas
PREPARATION

Heat oil in a large saucepot over medium heat and cook rice about 2 minutes or until golden, stirring frequently. Add onion and garlic and cook about 4 minutes or until onion is almost tender, stirring frequently. Stir in remaining ingredients except peas and bring to a boil. Reduce heat and simmer covered about 20 minutes or until rice is tender, adding peas during last 5 minutes. Remove from heat and fluff with fork. Garnish with chopped fresh cilantro.
