MUSHROOM LEEK SOUP

INGREDIENTS
1 Tbsp. olive oil
1 cup sliced mushrooms
1 medium clove garlic, finely chopped
2 Tbsp. dry sherry
1 package KnorrĀ® Leek recipe mix
1-1/2 cups water
1-1/2 cups milk
PREPARATION

Heat olive oil in deep 12-inch nonstick skillet over medium-high heat and cook mushrooms, stirring occasionally, 3 minutes or until golden. Add garlic and cook 30 seconds. Add sherry and cook 1 minute. Add KnorrĀ® Leek recipe mix combined with water and milk. Bring to a boil over high heat. Reduce heat to low and simmer, stirring occasionally, 5 minutes.
