PREPARATION
In 12-inch nonstick skillet, heat 1 tablespoon oil over medium-high heat and brown beef. Remove beef and set aside.
In same skillet, heat remaining 1 tablespoon oil and cook onion and mushrooms, stirring frequently, until tender, about 4 minutes. Add garlic and ginger and cook 30 seconds. Add Knorr® Spring Vegetable recipe mix blended with water, sherry and soy sauce. Bring to a boil over high heat, stirring frequently. Reduce heat to low and simmer, stirring occasionally, 5 minutes. Stir in snow peas and reserved beef with juices. Cook 2 minutes or until heated through. Serve, if desired, with hot cooked rice and sprinkle with chopped cashews.
