PREPARATION
Season chops, if desired, with salt and ground black pepper. Heat 1 tablespoon olive oil in 12-inch nonstick skillet over medium-high heat and cook chops, turning once, 10 minutes or until chops are done. Remove chops and set aside.
Heat remaining 1 tablespoon olive oil in same skillet over medium-high heat and cook red pepper and onion, stirring occasionally, 3 minutes or until vegetables are tender. Add garlic and cook 30 seconds. Add Knorr® Roasted Pork gravy mix blended with water, curry and vinegar. Bring to a boil over medium-high heat, stirring frequently. Reduce heat to low and simmer 2 minutes. Return chops to skillet and heat through. Serve, if desired, with hot cooked rice or noodles.
