SOUTHERN-STYLE CATFISH WITH DIRTY RICE

INGREDIENTS
1/2 cup yellow cornmeal
1 Tbsp. salt
1/4 tsp. ground red pepper
1 lb. catfish fillets*
3/4 cup buttermilk
1/2 cup all-purpose flour
1/3 cup vegetable oil
1 package Knorr® Cajun Sides™ - Dirty Rice, prepared according to package directions
PREPARATION

Mix cornmeal, salt and pepper in large, shallow dish. Dip fish in buttermilk; shake off excess buttermilk, then coat both sides with flour. Dip again in buttermilk, then coat with cornmeal mixture.

Heat oil in 12-inch skillet over medium-high heat and fry fish 10 minutes or until fish flakes with fork, turning once. Serve with Knorr® Cajun Sides™ - Dirty Rice.

*SUBSTITUTION: Use 1 lb. sole, cod, flounder or halibut instead of catfish.
