PREPARATION
Bring water, Spread, Knorr® Rice Sides™ - Herb & Butter, lime juice and red pepper to a boil in 2-quart saucepan over high heat. Reduce heat to low and simmer covered, stirring occasionally, 7 minutes or until rice is tender. Stir in green onions and let stand 2 minutes.
Meanwhile, season scallops, if desired,with salt and ground black pepper. Heat olive oil in 12-inch nonstick skillet over medium-high heat and cook scallops, turning once, 6 minutes or until golden brown. Arrange scallops around rice on serving platter.
