RICE WITH SHRIMP & PINEAPPLE

INGREDIENTS

2 Tbsp. olive oil 1 boneless, skinless chicken breast half (about 5 oz.), cut into cubes 1 medium onion, chopped 1 medium red bell pepper, diced 2 cloves garlic, finely chopped 1/2 tsp. salt 1 cup fresh or canned pineapple chunks 1 cup uncooked long grain rice 2-1/4 cups water 1 Tbsp. Knorr® Tomato Bouillon with Chicken flavor 1 envelope Knorr® Sazon with Coriander and Annatto 1 lb. uncooked shrimp, peeled and deveined Hot pepper sauce to taste 1/2 cup chopped green onions 1/2 cup chopped cilantro

PREPARATION
In large saucepot, heat olive oil over medium heat and brown chicken. Remove chicken and set aside.
In same saucepot, cook onion, red pepper, garlic and salt, stirring occasionally, 3 minutes. Stir in pineapple, rice, water, Knorr® Tomato Bouillon with Chicken flavor and Knorr® Sazon with Coriander and Annatto. Bring to a boil over high heat. Reduce heat to low and simmer covered 20 minutes. Return chicken to saucepan, then stir in shrimp. Simmer covered 5 minutes or until chicken is thoroughly cooked and shrimp turn pink. Stir in hot pepper sauce. Garnish with green onions and cilantro.
