LEMON-VEGETABLE CHICKEN & RICE

INGREDIENTS
1 Tbsp. olive oil
4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
1-1/2 cups water
1 package Knorr® Vegetable recipe mix
1 Tbsp. grated lemon peel
1/2 tsp. dried thyme leaves, crushed
1 package Knorr® Rice Sides™ - Creamy Chicken, prepared according to package directions
PREPARATION

Heat olive oil in 12-inch nonstick skillet over medium-high heat and brown chicken, about 5 minutes, turning once.

Stir in water blended with Recipe Mix, lemon and thyme. Bring to a boil over high heat. Reduce heat to low and simmer covered, stirring occasionally, 10 minutes or until chicken is thoroughly cooked. Serve with Knorr® Rice Sides™ - Creamy Chicken.
