CHICKEN CUTLET SCAMPI PASTA WITH PEAS & MUSHROOMS

INGREDIENTS
1-1/4 lbs. chicken breast cutlets
2 Tbsp. I Can't Believe It's Not Butter!® Spread, divided
1 package (10 oz.) mushrooms, sliced
2-1/4 cups water
1 package Knorr® Italian Sides™ - Scampi Flavor
1 cup frozen green peas, thawed
PREPARATION

  1. Season chicken, if desired with salt and ground black pepper. Melt 1 tablespoon Spread in 12-inch nonstick skillet over medium-high heat and cook chicken, turning once, 8 minutes or until chicken is thoroughly cooked. Remove chicken and set aside.
  2. Melt remaining 1 tablespoon Spread in same skillet and cook mushrooms, stirring occasionally, 4 minutes or until golden.
  3. Add water and bring to a boil. Add Knorr® Italian Sides™ - Scampi Flavor and return to a boil. Reduce heat to medium and cook uncovered, stirring occasionally, 5 minutes. Stir in peas and cook 2 minutes or until pasta is tender. Spoon onto serving platter, then top with chicken. Serve, if desired, with lemon wedges.
